Microwave Peanut Butter Fudge!
Microwave Peanut Butter Fudge (yield: 1 pound)
Fudge is supposed to be a confection that takes time to make and time to savor. I have found that people love it even if it didn't take me all day, so I propose a 5 minute fudge you make in the microwave! The instructions and the ingredients are simple and easy to get a hold of.
You will need:
- 1 c Chocolate chips (store bought or homemade)
- 1/2 c Peanut Butter (crunchy or creamy)
- 1 c Sweetened Condensed Milk (homemade is easy and cheep. Check out this video and learn how! See Mary Ann's Make It with Powdered Milk book for recipe)
Step 1 Place peanut butter and chocolate chips in a microwavable bowl. Step 2 Microwave on High for 1 minute, remove from the microwave and stir until the chocolate is completely melted. Add the sweetened condensed milk. Stir together until smooth and creamy. If you are using regular chocolate chips, it may take a little longer. (If you use crunchy peanut butter there will be lumps because of the nuts.) | |
Step 3 Pour mixture into a small bar pan or jelly roll pan that has been lined with foil and sprayed with just a little non-stick spray. My favorite is Pan Guard! Chill in the fridge for 1-2 hours or until set. | |
Step 4 Remove from pan by placing a cutting board or mat on top of the pan and flipping it over. Remove the foil from the pan, and then remove the foil from the fudge. | |
Step 5 Cut into squares with a pizza cutter. Place in an air-tight container with wax paper or plastic between the layers for storage. Will keep in the Freezer for 1 year! |
Variations:
- Try using milk chocolate, dark chocolate, or white chocolate pieces instead of semi-sweet.
- Add any kind of nuts to the fudge for a change in flavor and texture.
I like giving fudge to my neighbors and friends for Christmas. It is a simple and inexpensive way to give everyone on my list a little treat. I like to make it up in advance so it's one less thing I have to do when the holiday hustle and bustle hits.
