Pumpkin Streusel Muffins

Pumpkin Streusel Muffins
3 1/2 c. Basic Muffin Mix
1 c. Pumpkin
1 c. Water
1 tsp. Pumpkin Pie Spice
Streusel
2-3 Tbsp. Butter
1/2 Tsp. Cinnamon
1/4 c. Flour
1/4 c. Brown Sugar
1/2 c. Oats
Step one is the Streusel. Cut your chilled butter into cubes and set aside.

Mix the flour, sugar, and cinnamon together well.

Toss the butter in the dry ingredients to coat then with your fingers rub the butter into
the dry ingredients until the mixture resembles a cornmeal texture.

Mix in the oats and set aside.

For the muffins, first mix the dry ingredients together then in a separate bowl mix wet ingredients together.

Add the wet to the dry and mix just enough to combine.
Do Not Over mix!

Fill paper lined cups 3/4 full with batter then sprinkle on about 1-2 tsp. streusel. Press lightly into the top of the muffin batter.

Bake at 400 for 13-16 minutes.
Tip: To polish these off mix 1 cup powdered sugar with a few drops water to make a thin icing glaze and drizzle it on top of the muffins once they have cooled.
That's all there is to it, now get cooking!
