Generally dried and ground, or pulped and baked into cakes, which
are then ground and sifted to make the powdered spice.  It is in
more or less the middle of the Scoville heat rating table.

Suggested uses: Used fresh in Caribbean or Indian cooking.  Dried Cayenne is good to add heat to anything like salsas, fajitas or tacos, chili, and buffalo wings.
